Pickle Relish recipe

It's as traditional as a relish can get! Sweet pickles, a bit crispy, a bit soft, combine with lots of spices to make a perfectly peppy relish. Serve over hot dogs, chili dogs, burgers, and anything else that goes on a bun.

Ingredients:

1 cup apple cider vinegar
½ cup water
¼ cup sugar
1 tablespoon salt
1 teaspoon mustard seeds
1 teaspoon celery seeds
1 teaspoon coriander seeds
8 dill pickles, finely chopped
1 cup diced red bell pepper
½ cup diced onion

Directions:

1) Combine vinegar, water, sugar, salt, mustard, celery, and coriander in a medium pot. Bring to a boil over high heat; lower to a simmer and cook 10 minutes, until slightly reduced.

2) Combine remaining ingredients in a large bowl. Pour reduced liquid over and mix well. Cover and refrigerate 4 hours before serving.
